This course provides an overview of the scientific literature related to the efficacy and safety of popular diets for weight loss. Prerequisite: NDS 370 with a grade of C or better; or graduate standing.

Faculty-led study abroad course to acquire learning experience in food, culture, and nutritional and public health problems in a host country. Recommended: NDS 271, NDS 370, NDS 512.

This course provides an overview of medical nutrition therapy with a focus on the current evidence-based nutrition practice guidelines for prevention and treatment of diseases. Prerequisites: NDS 370 and NDS 473 and BIO 392, or HSC 214 and HSC 215; one of the following: CHM 421 or CHM 425 or CHM 522; or graduate status.

Overview of the etiology, differential diagnosis, medical consequences, treatment, and prevention of eating disorders. Obesity in relation to eating disorders will also be addressed. May be offered as Writing Intensive. Prerequisite: NDS 370 or graduate status.

Issues in pharmacology and drug-nutrient interactions with respect to polypharmacy, nutritional and appetitive drug effects.  Prerequisite: Admission to the online MS in Nutrition and Dietetics Program.

Medical, scientific and proposal writing using research and evidence based literature for the submission of publications or proposals to external venues. 

Issues and controversies in nutrition and end of life care with respect to ethics, decision-making, fiscal and other considerations. Prerequisite: Admission to the online MS in Nutrition and Dietetics Program.

Advanced concepts of diet therapy and care for normal pediatrics and clinical disorders with nutritional implications specific to pediatric patients. Prerequisite: Admission to the online MS in Nutrition and Dietetics Program.

Advanced concepts of nutrition to support optimal performance with nutritional implications specific to athletics and fitness.  Prerequisites: Admission to the online MS in Nutrition and Dietetics Program.

Professor-led student review and presentation of specific topics of current research in nutrition. Prerequisite: Admission to the Master of Science in Nutrition and Dietetics.

Advanced, evidence-based concepts of diet therapy and care for a variety of clinical disorders with nutritional implications. Includes coverage of enteral and parenteral nutrition.  Prerequisites: Admission to the Master of Science in Nutrition and Dietetics program.

Presents techniques for nutritional assessment of individuals and groups: evaluation of dietary intake, anthropometry, nutritional analysis software, and biochemical, and clinical indices. Prerequisite: Admission to the online MS in Nutrition and Dietetics Program.

Application of dietary principles to human pathophysiologic status through documenting and counseling individuals, assessing, educating groups, and planning in all healthcare and community settings. Prerequisite: Registration is restricted to students accepted into the dietetic internship and Graduate Studies.

Application of administrative principles (budget decisions, cost containment, personnel management, leadership) involved in the production, distribution, and service of food in healthcare and community settings. Integration and application of clinical, foodservice, and community nutrition principles and their implementation in all healthcare and community settings. Prerequisite: Registration is restricted to students accepted into the dietetic internship and Graduate Studies.

Presents key concepts of nutritional epidemiology. Enables students to evaluate clinical research investigating the role of nutrition in disease causation and health promotion.  Prerequisite: Admission to the MS in Nutrition and Dietetics Program.

Presents fundamental concepts in research methods and biostatistics. Emphasizes evaluating and utilizing methods in nutrition research.  Prerequisite: Admission to the MS in Nutrition and Dietetics Program.

Application of the nutrition care process and evidence-based concepts of diet therapy and nutritional counseling for various pathophysiological disorders in a healthcare and/or community setting. Prerequisites: Admission to the Master of Science in Nutrition and Dietetics (MSND) Plan B: Experiential Track - A Pathway to RDN; NDS 661, NDS 664, NDS 672, NDS 673. Co-requisite: NDS 662.

Application of foodservice principles, including budget decisions, cost control, personnel management, and leadership, involved in the service of food in healthcare and/or community settings. Prerequisites: Admission to the Master of Science in Nutrition and Dietetics (MSND) Plan B: Experiential Track - A Pathway to RDN; NDS 697. Co-requisite: NDS 678.

This rotation offers students practical applications of nutrition principles in community settings, enhancing their comprehension of health determinants, epidemiology, health disparities, and community nutrition programs. Prerequisite: Admission to the Master of Science in Nutrition and Dietetics (MSND) Plan B: Experiential Track - A Pathway to RDN; NDS 677. Co-requisite: NDS 678.
